New-York style cheesecake. Quite heavy but nice :)

Components

  • Pâte Sablée Speculoos

  • Cheesecake Filling

Further Ingredients

  • Butter

Directions

  • Butter a ø25.5cm mold

  • Prepare the dough and distribute it evenly in the mold

  • Spike the dough

  • Bake it at 180°C for 10 minutes

  • Prepare the filling and pour it on top of the dough

  • Bake for 50 minutes at 180°C

Further Improvements

  • Cooking for longer makes it rise too much

Pâte Sablée Speculoos

Ingredients

  • 110g speculoos

  • 100g butter

  • 180g flour

  • 1 egg

  • 1 bag vanilla sugar

  • 2 table spoon sugar

Directions

  • Mix the speculoos

  • Add the sugar, vanilla sugar and flour

  • Add the butter cut in small pieces and mix with hands

  • Add the egg and continue to mix until it’s even

  • Let it cool in the fridge

Cheesecake Filling

Ingredients

  • 880g crème fraiche

  • 450g Philadelphia

  • 170g sugar

  • 2 table spoon flour

  • 3 eggs

  • 1 bag vanilla sugar

Directions

  • Mix the crème fraiche, philadelphia and sugars until smooth

  • Add flour

  • Add eggs

  • Mix everything
