Directions
Butter a ø25.5cm mold
Prepare the dough and distribute it evenly in the mold
Spike the dough
Bake it at 180°C for 10 minutes
Prepare the filling and pour it on top of the dough
Bake for 50 minutes at 180°C
Further Improvements
Cooking for longer makes it rise too much
Pâte Sablée Speculoos
Ingredients
110g speculoos
100g butter
180g flour
1 egg
1 bag vanilla sugar
2 table spoon sugar
Directions
Mix the speculoos
Add the sugar, vanilla sugar and flour
Add the butter cut in small pieces and mix with hands
Add the egg and continue to mix until it’s even
Let it cool in the fridge

Ingredients
880g crème fraiche
450g Philadelphia
170g sugar
2 table spoon flour
3 eggs
1 bag vanilla sugar
Directions
Mix the crème fraiche, philadelphia and sugars until smooth
Add flour
Add eggs
Mix everything
