Enchiladas with salsa

Vegetarian enchiladas with bought salsa. Really tasty, easy and quick to make!

Ingredients

  • 400g crushed tomatoes (gross)

  • 400 white beans (gross)

  • 800g black beans (gross)

  • 200g corn (gross)

  • 1 red onion

  • 2 garlic cloves

  • 6 tortilla

  • Grated cheese

  • 1 salsa pot

  • 1 tsp oil

  • 2 tsp tomato concentrate

  • chili spices mix

Directions

  • Pre-heat the oven to 225°C.

  • Chop the onion and fry it in a pan with oil.

  • Chop the garlic and add it to the pan.

  • Add the cumin and chili powder to it.

  • Add the tomato concentrate and the crushed tomatoes. Wait for it to dry a bit.

  • Add salt and pepper.

  • Rince the beans and add them to the pan.

  • Add the corn

  • Fill the tortillas with the preparation and roll them on an oven tray.

  • Put cheese on top.

  • Bake for 15 minutes.
