Butter a ø25.5cm mold
Prepare the dough and distribute it evenly in the mold
Prepare the filling and pour it on top of the dough
Bake for 1 hour and 15 mins at 160°C
Let it cool down upside down on a grid

Pâte Sablée
Ingredients
75g butter
50g sugar
200g flour
1 egg
1 bag vanilla sugar
½ bag baking powder
Directions
Mix the sugar, vanilla sugar, flour and baking powder
Add the butter cut in small pieces and mix with hands
Add the egg and continue to mix until it’s even
Let it cool in the fridge

Ingredients
400g faisselle
100g crème fraîche épaisse
40g maïzena
100g sugar
3 egg
1 bag vanilla sugar
1 tea spoon vanilla extract
Directions
Mix the maïzena and sugars
Add the egg yolks, keep the whites
Add the vanilla extract
Add and mix the cream cheese
Beat the egg whites in another bowl
Mix the two delicately, there should be no clumps left but still aerated
